What
is aging?
The process of aging is significant and improves the tenderness of the
beef. To age our beef we hang it under controlled temperature and
humidity conditions before it is displayed in our meat counter. During
the aging process naturally occurring enzymes within the meat slowly
break down some of the connective tissues that contribute to
toughness. At Mission Meats we
ensure that our Canadian beef is aged to perfection.
What
is Canadian
Grade A, AA, AAA? The
difference between the three grades is the amount of marbling present in the beef. Grade A
has the least marbling and Grade AAA has the most.
What
is Colouring?
Our meat is not coloured or dyed to give it a fresh red
colour. In fact, government regulations prohibit the use of
colouring or additives to fresh meat. The aging process can
contribute to beef being slightly darker in colour.
What
is Marbling?
The fine white streaks of fat running throughout lean meat is called
marbling. Grade AAA has the most marbling while Grade A has the
least. In general, Grade AAA has the overall eating quality.
If you are worried about the fat content in the Grade AAA not to
worry. The amount of extra fat in the Grade AAA is minimal.
How
come your meat is more expensive that the larger stores?
There is no one reason for the price difference. Sometimes larger
stores will lower their meat prices to get you into their store to buy
other items that are not on sale. Also, their beef may not
be Canadian beef.
Should
I be concerned about hoof and mouth disease in Canadian and imported
beef? No. Canadian regulation are extremely
strict.
What
is mad cow disease and should I be concerned about it in Canadian beef?
No. Mad cow disease is caused by feeding cattle food products that
contain animal content. Canadian regulations are extremely strict
and forbids such feeding practices.
What
is Nicolla Valley hormone free beef? This
beef has the following qualities: (1) It has never been
administered antibiotics or hormones, (2) It is free of
artificial preservatives and additives, (3) It is free from fillers and
is 100% pure beef, and (4) It is aged for 21 days to enhance the flavour
and tenderness.
